The flour we use for making our pastry is of the very best quality. It comes from Doves Farm Foods which was established 1978, when they bought a mill stone and set it up a barn on the picturesque Wiltshire /Berkshire border. They now have a thriving business that mills many different rare grains. At the heart of their ethos is dedication to ethical production methods, and slow and organic food. On their farm they rotate crops, grassland and livestock, as well respecting the biodiversity of wild life and the local environment. They have had Soil Association organic certification for 30 years.
